*sigh* No, no computer. But I am determined to go-go with MoFo, so here’s a pictorial recap of my afternoon/evening spent playing with pumpkin.

Despite my recent quarrel with Lady Luck, I do so love autumn . . .

We must be thinking the SAME THING! Lunch today was Yellow Split Peas, simmered tender, pureed and mixed in coconut milk. I added coriander and turmeric to mine and it turned out electric yellow. (Will post tomorrow on blog for MoFo) Hubby said it was “the best soup you’ve ever made”!

Let me tell you Say, I bought a souped up Macbook Pro in August and I have never been more satisfied with a computer. Seriously consider it. I don’t even think they offer Macbooks anymore, now that I think of it!

I’m trying to get in every day for MoFo . . . so far so good!

Sorry, I didn’t write this one down! Super simple though, just ~2 cups yellow split peas, 2 carrots, 4 ribs celery, 1/2 a large onion, about 4 cups cubed pumpkin flesh, some cumin, garlic powder, chili powder, and simmered for many hours in the crock pot. Finished off with salt and red pepper flakes and a drizzle of coconut oil to serve!

Coconut milk + lentils/split peas is really, really just a match made in heaven, isn’t it?
