I need to try this tonight! I picked a bunch of lemon basil thinking I was going to make pesto, and well, it is aging much faster than I expected. A basil vinegar probably would taste great for quick pickled cucumbers. And maybe I will grow some more medicinal herbs next spring since this is a great way to preserve them.
